- 400g lamb mince
- 1 garlic clove, crushed
- 1 tsp ground cumin
- 2 tsp ground coriander
- 2 handfuls mint leaves, half chopped, half whole for garnish
- 2 large tomatoes, deseeded and diced
- 4 small khobez flatbreads or 4 soft flour tortillas
- 4 tbsp low-fat natural yogurt
Instructions
- Cook the Lamb: Heat a non-stick frying pan over high heat and add the lamb mince. Cook for 5-6 minutes, stirring occasionally until it begins to brown.
- Add Garlic and Spices: When the lamb starts browning, stir in the crushed garlic, ground cumin, and ground coriander. Continue cooking for another 2-3 minutes, allowing the mince to brown fully and ensuring no liquid remains in the pan.
- Mix in Mint and Tomatoes: Stir in the chopped mint leaves and the deseeded diced tomatoes. Season with salt and pepper to taste, then mix everything well and remove the pan from the heat.
- Prepare Flatbreads: Preheat your grill to high. Arrange the khobez flatbreads or flour tortillas on a baking tray.
- Assemble and Grill: Spread the lamb mixture evenly over each flatbread. Place the tray under the grill and cook for 2-3 minutes, until the flatbreads are warmed through and slightly crisp.
- Serve: Remove from the grill, scatter the remaining whole mint leaves over the top, and drizzle each flatbread with low-fat natural yogurt. Serve immediately while hot.
