  • 2 handfuls mint leaves, half chopped, half whole for garnish
  • 2 large tomatoes, deseeded and diced
  • 4 small khobez flatbreads or 4 soft flour tortillas
  • 4 tbsp low-fat natural yogurt

Instructions

  1. Cook the Lamb: Heat a non-stick frying pan over high heat and add the lamb mince. Cook for 5-6 minutes, stirring occasionally until it begins to brown.
  2. Add Garlic and Spices: When the lamb starts browning, stir in the crushed garlic, ground cumin, and ground coriander. Continue cooking for another 2-3 minutes, allowing the mince to brown fully and ensuring no liquid remains in the pan.
  3. Mix in Mint and Tomatoes: Stir in the chopped mint leaves and the deseeded diced tomatoes. Season with salt and pepper to taste, then mix everything well and remove the pan from the heat.
  4. Prepare Flatbreads: Preheat your grill to high. Arrange the khobez flatbreads or flour tortillas on a baking tray.
  5. Assemble and Grill: Spread the lamb mixture evenly over each flatbread. Place the tray under the grill and cook for 2-3 minutes, until the flatbreads are warmed through and slightly crisp.
  6. Serve: Remove from the grill, scatter the remaining whole mint leaves over the top, and drizzle each flatbread with low-fat natural yogurt. Serve immediately while hot.
