  • 1/3 cup lime juice (from 46 limes)
  • 1/4 cup white miso
  • 1/4 cup sugar
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt

Salad

  • 1 lb. cooked shrimp, cut into bite-sized pieces
  • 5 cups shredded Tuscan kale
  • 5 cups shredded green cabbage
  • 1 cup chili-flavored peanuts (or similar)
  • 2 avocados, sliced
  • 1/2 cup sliced green onions
  • 1/2 cup chopped cilantro

Instructions

  1. Make the dressing: Shake all dressing ingredients in a jar until well combined, or blend them together in a small food processor until smooth. If the dressing is too thick, add a little water gradually until it pours smoothly off the spoon.
  2. Prepare the salad: In a large bowl, combine the cooked, bite-sized shrimp, shredded Tuscan kale, shredded green cabbage, chili-flavored peanuts, sliced avocados, green onions, and chopped cilantro.
  3. Toss the salad: Pour the prepared miso-lime dressing over the salad ingredients and toss thoroughly to coat everything evenly.
  4. Serve and store: Serve immediately for best texture and flavor. Alternatively, keep salad components and dressing separate and assemble individual portions as needed throughout the week for easy meals.
