The Neon Noodle Cloud Dish is a visually striking and creamy pasta recipe featuring vibrantly colored noodles coated in a luscious cream cheese sauce. This playful and artistic dish combines the vibrant hues of food coloring with a decadent, parmesan-infused cloud-like sauce, garnished with scallions, toasted sesame seeds, and optional edible flowers or microgreens for an elegant finish. Perfect for those looking to add a pop of color and creativity to your dinner table, this recipe balances flavor and aesthetics effortlessly.

Ingredients

Scale

Noodles

  • 10.5 oz dried wheat noodles or ramen noodles

Food Coloring

  • Food coloring gels (pink, blue, yellow, green; gel type for optimal vibrancy)

Sauce

  • 3/4 cup whole milk or plant-based milk
  • 4.25 oz cream cheese or vegan cream cheese
  • 1 tbsp unsalted butter or vegan butter
  • 2 tbsp grated parmesan cheese or nutritional yeast
  • 1 tsp cornstarch
  • 1/4 tsp salt
  • 1/4 tsp ground white pepper

Garnish

  • 2 scallions, finely sliced
  • 1 tbsp toasted sesame seeds
  • Edible flowers or microgreens (optional)

Instructions

  1. Prepare Colored Boiling Water: Bring a large pot of water to a rolling boil. Once boiling, separate the water into several heatproof bowls, one for each desired noodle color to ensure vibrant coloring.
  2. Tint Water with Food Coloring: Add a small amount of gel food coloring to each bowl of water and stir thoroughly to create vivid, evenly colored water which will dye the noodles.
  3. Cook and Rinse Noodles: Divide the dried noodles evenly among the colored water bowls. Cook each portion for 2–3 minutes less than the package instructions to maintain an al dente texture. After cooking, transfer the noodles to a colander and rinse under cold water to immediately halt the cooking process and keep the noodles separate.
  4. Prepare Creamy Sauce Base: Place a saucepan over medium heat and melt the unsalted butter. Add the cream cheese and whisk continuously until the mixture is smooth and creamy.
  5. Finish the Cloud Sauce: Gradually incorporate the milk, grated parmesan cheese (or nutritional yeast), cornstarch, salt, and ground white pepper into the cream cheese blend. Stir constantly until the sauce thickens to a smooth, cloud-like consistency, about 5 minutes.
  6. Combine Noodles and Sauce: Add the colored noodles to the creamy sauce. Gently fold the noodles into the sauce to coat each strand while keeping the colors visually distinct for a cloud effect or swirl slightly for a marbled appearance.
  7. Serve and Garnish: Immediately plate the noodles and sprinkle with finely sliced scallions, toasted sesame seeds, and optionally, edible flowers or microgreens to enhance visual appeal and add freshness.

Notes

  • Use gel food coloring for the best vibrant noodle colors as liquid food coloring may dilute the boiling water.
  • Cooking the noodles slightly under package recommendation ensures perfect texture after sauce mixing.
  • The sauce can be made vegan by using plant-based milk, vegan cream cheese, vegan butter, and nutritional yeast instead of parmesan.
  • Edible flowers or microgreens are optional, but they elevate the presentation and add a fresh, subtle flavor.
  • Rinse noodles under cold water after boiling to stop cooking and prevent colors from blending together.
  • Adjust salt and pepper according to taste preferences, especially when using nutritional yeast.
