  • 3 cups (275g) quick oats (do not use old fashioned oats)

Instructions

  1. Prepare the Ingredients: Line two baking sheets with parchment paper or set out approximately 29 cupcake liners.
  2. Cook the Mixture: In a medium saucepan, combine butter, sugar, cocoa, and milk. Cook over medium heat, stirring frequently until it boils.
  3. Boil the Mixture: Allow the mixture to boil without stirring for 60 seconds.
  4. Add the Remaining Ingredients: Remove from heat and stir in vanilla, peanut butter, and quick oats until well combined.
  5. Form the Cookies: Using a cookie scoop, drop mixture onto lined baking sheets or into cupcake liners.
  6. Set the Cookies: Let the cookies rest at room temperature until set, about 20-30 minutes (or refrigerate to speed up setting).
