Apple Topping

  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the perfect temperature for baking.
  2. Prepare the Apple Topping: Peel, core, and dice the apples into 1/2-inch pieces. In a medium bowl, combine the diced apples with brown sugar, melted butter, and cinnamon. Toss well to coat evenly, then set aside.
  3. Combine Dry Ingredients: In a large bowl, whisk together rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt until well mixed.
  4. Mix Wet Ingredients: In a separate bowl, whisk together milk, applesauce, maple syrup (or honey), lightly beaten eggs, melted coconut oil (or butter), and vanilla extract until smooth.
  5. Combine Wet and Dry: Pour the wet ingredients into the bowl with dry ingredients. Stir gently until just combined, making sure not to overmix to keep the texture light.
