Ingredients
Scale
Batter
- 1 cup all-purpose flour
- 3/4 cup light or dark brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 1 cup milk
- 1 tablespoon vanilla extract
Peaches and Topping
- 5–6 peaches, cut into 8 wedges each
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1 stick (8 tablespoons) salted butter, cubed
- 4 tablespoons salted butter
- 2 tablespoons maple syrup
Instructions
- Preheat and melt butter: Preheat your oven to 375°F (190°C). Place the cubed butter into a 9×13 inch baking dish and put the dish in the oven to melt the butter evenly. This takes about 10 minutes.
- Prepare the batter: While the butter melts, stir together flour, 3/4 cup brown sugar, baking powder, cinnamon, and salt in a bowl. Add the milk and vanilla extract, mixing gently just until combined to avoid overworking the batter.
- Toss the peaches: In a separate bowl, toss the peach wedges with 1/4 cup brown sugar and 1/4 cup maple syrup to coat them evenly and release their natural sweetness.
- Assemble the cobbler: Remove the baking dish with melted butter from the oven. Layer half of the peach mixture over the melted butter. Pour the batter evenly over the peaches, but do not stir it in. Finally, layer the remaining peaches on top of the batter.
- Bake the cobbler: Place the assembled dish into the oven and bake for 50-55 minutes until the cobbler’s center is set and the edges turn golden brown.
- Make maple butter drizzle: While the cobbler bakes, combine 4 tablespoons salted butter and 2 tablespoons maple syrup in a small pan. Bring to a boil and let it boil for 2 minutes, then remove from heat.
- Serve: Serve the warm or room temperature cobbler with vanilla ice cream or whipped cream and drizzle the warm maple butter sauce on top for an extra indulgent finish.
Notes
- Use ripe peaches for the best natural sweetness and flavor.
- The butter must be melted in the baking dish before adding peaches and batter for a crispy crust bottom.
- Do not stir the batter after pouring it over the peaches to allow the cobbler to set properly.
- This cobbler pairs wonderfully with vanilla ice cream or fresh whipped cream.
- Leftovers can be covered and refrigerated for up to 3 days; reheat before serving.
