- 400g butter beans, drained
- 3 garlic cloves, crushed

- 200g feta cheese
- 3 tbsp extra virgin olive oil (divided: 2 tbsp for vegetables, 1 tbsp for feta)

Instructions
- Prepare the oven and vegetables: Preheat your oven to 200°C (180°C fan)/gas mark 6. In a baking dish, combine the halved or quartered cherry tomatoes and drained butter beans.
- Season and coat: Sprinkle the dried oregano, paprika, and crushed garlic cloves over the tomatoes and beans. Drizzle 2 tablespoons of extra virgin olive oil over everything, then season with a pinch of salt and pepper. Toss gently to evenly coat the beans and tomatoes in the seasoned garlicky oil.
- Add the feta and zest: Nestle the block of feta cheese in the center of the baking dish. Top the feta with a pinch of chili flakes if desired, lemon zest, and a drizzle of the remaining 1 tablespoon of olive oil. Squeeze half of the lemon juice over the beans and tomatoes to add a fresh, tangy brightness.
- Bake the dish: Place the baking dish in the preheated oven and bake for 25-30 minutes. Bake until the feta is tender and lightly golden on top, and the tomatoes are softened and slightly caramelized.
- Serve: Remove from the oven and serve immediately with toasted sourdough bread for scooping up the flavorful beans, tomatoes, and creamy feta.
