Omelette and Stir-Fry Base

- 85g frozen peas
- 2 tsp sesame oil
- 2 tbsp low-salt soy sauce
- 400g fresh pineapple, roughly chopped into chunks (about ½ medium pineapple)
Instructions
- Make the Omelette: Heat 1 tbsp of vegetable or sunflower oil in a wok over medium-high heat. Pour in the beaten eggs, swirling them up the sides to create a thin omelette. Cook until fully set, then carefully roll the omelette onto a chopping board and slice into thin ribbons. Set aside.
- Prepare the Stir-Fry Base: Heat the remaining ½ tbsp oil in the wok. Add the crushed garlic, chopped spring onions, and Chinese five-spice powder. Stir-fry everything together until it becomes fragrant and sizzling, about 1-2 minutes.
- Cook the Rice and Vegetables: Add the cooked long-grain rice to the wok, breaking up any clumps if using pre-packaged pouches by squeezing the pouch beforehand. Stir in the frozen peas, then drizzle with sesame oil and low-salt soy sauce. Continue stir-frying over high heat until the rice is hot and well combined with the seasonings, approximately 3-4 minutes.
- Finish and Serve: Gently fold in the chopped pineapple chunks and omelette ribbons into the hot rice mixture. Stir just to combine and heat through for 1 minute. Remove from heat and serve immediately for best flavor and texture.
