Description
Polish Baked Paczki are a lighter, oven-baked version of the traditional fried Polish donuts. Soft, fluffy, and filled with delicious fruit jam, these treats are perfect for enjoying a sweet snack without the extra oil. This recipe is simple and quick, delivering flavorful paczki with a tender crumb and a dusting of powdered sugar for an authentic finish.
Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
Wet Ingredients
- 1/2 cup whole milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
Filling and Topping
- 1/2 cup fruit jam (such as raspberry or rose)
- powdered sugar (for dusting, optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly grease the donut pan to ensure the paczki don’t stick during baking.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground nutmeg until evenly combined.
- Combine Wet Ingredients: In a separate bowl, whisk the whole milk, melted unsalted butter, eggs, and vanilla extract together until smooth and fully incorporated.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing to keep the batter light and tender.
- Fill Donut Pan: Transfer the batter to a piping bag or use a spoon to fill each cavity of the donut pan about halfway full to allow room for rising.
- Bake: Place the pan in the preheated oven and bake for 12-15 minutes, or until the paczki are lightly golden and spring back when gently touched.
- Cool: Allow the baked paczki to cool in the pan for 5 minutes before transferring to a wire rack to cool completely to prevent sogginess.
- Fill with Jam: Once cooled, use a piping bag fitted with a small nozzle to fill each paczki with fruit jam by inserting the nozzle into the side of the donut carefully to avoid breaking it.
- Finish and Serve: Dust the filled paczki with powdered sugar if desired and serve immediately for a delightful treat.
Notes
- Make sure not to overmix the batter to keep the texture tender and light.
- You can use any fruit jam you prefer for the filling, such as raspberry, strawberry, or rose.
- If you don’t have a donut pan, muffin tins can be used, but the shape will differ.
- For a different flavor, add a teaspoon of lemon zest into the batter.
- Store leftovers in an airtight container and consume within 2 days for best freshness.
