Noodles and Vegetables

  • 3 nests medium egg noodles
  • 140g broccoli, chopped into small florets
  • 140g baby corn, halved
  • 1 red pepper, sliced

  • 300g prawns

Sauce and Oil

  • 1 tbsp olive oil
  • 3 tbsp tomato ketchup
  • 2 tbsp oyster sauce

Instructions

  1. Cook noodles and vegetables: Bring a large pot of boiling water to a rapid boil and cook the egg noodles, chopped broccoli florets, and halved baby corn for 3-4 minutes or until tender but still crisp. Drain thoroughly and set aside.
  2. Sauté red pepper: Heat 1 tablespoon of olive oil in a large frying pan or wok over medium-high heat. Add the sliced red pepper and fry for about 3 minutes, until it starts to soften but retains some crunch.
  3. Toss ingredients together: Add the cooked noodles, broccoli, and baby corn back into the pan with the sautéed red pepper. Add the raw prawns, tossing everything together to combine evenly.
  4. Add sauces and heat through: Pour in 3 tablespoons of tomato ketchup and 2 tablespoons of oyster sauce over the contents of the pan. Continue to stir and cook for another 2-3 minutes, until the prawns turn pink and the whole dish is heated through and piping hot.

Notes

  • If you have leftover roast chicken, shredding it and mixing it in with the prawns is a great way to add extra protein and flavor.
  • Ensure not to overcook the vegetables to maintain a pleasant crunch and vibrant color.
