Quinoa:

  • 1 cup quinoa
  • 1½ cups water
  • Pinch of kosher salt

Salad:

  • 1 mango, peeled and diced
  • 1 large tomato, seeded and diced
  • 1 cup chopped scallions
  • 1 cup chopped fresh cilantro
  • 15 oz can black beans, drained and rinsed
  • ¼ cup olive oil
  • ½ tsp kosher salt
  • ¼ cup red wine vinegar

Instructions

  1. Cook the quinoa: Rinse quinoa under cold water. Cook in Instant Pot with water and salt for 1 minute on high pressure. Natural release for 10 minutes. Fluff with a fork.
  2. Make the vinaigrette dressing: Whisk olive oil, salt, and red wine vinegar in a bowl.
  3. Assemble the salad: Combine cooled quinoa with mango, tomato, scallions, cilantro, and black beans. Pour dressing over and mix gently.
  4. Serve: Let the salad sit for 15 minutes to absorb flavors before serving warm or cold.
