These colorful Rainbow Fruit Lollies are a healthy and refreshing treat made by layering pureed fruits and yogurt. Featuring mango, banana, kiwi, raspberries, and blackberries, these frozen lollies combine vibrant flavors with creamy yogurt for a guilt-free snack perfect for warm days.

  • 100g mango, peeled, stoned and chopped
  • 2 bananas
  • 2 kiwi fruit, peeled and roughly chopped
  • 100g frozen raspberries
  • 100g frozen blackberries

Instructions

  1. Prepare the mango layer: Blitz 100g of peeled and chopped mango with half a banana and 100g of yogurt in a blender until smooth. Pour the mixture evenly between six ice lolly molds, then insert a stick into each mold, securing them upright with tape on both sides to keep them steady. Freeze for 1 hour until set.
  2. Prepare the kiwi layer: Blend the remaining half banana with 100g yogurt and the peeled, roughly chopped kiwi fruit until smooth. Pour this mixture gently over the frozen mango layer in the molds. Freeze for another 1 hour until set.
  3. Prepare the raspberry layer: Blend the 100g frozen raspberries until smooth. Pour over the kiwi layer and freeze for 1 hour until set.
  4. Prepare the blackberry layer and freeze: Blend 100g frozen blackberries until smooth and pour on top of the raspberry layer. Cover the lollies and freeze overnight to fully set.
  5. Demold and serve: To remove the lollies from the molds, briefly run the molds under warm water to loosen them. Serve immediately or store in the freezer for up to two months.

Notes

  • Use full-fat or Greek yogurt for a creamier texture.
  • You can substitute fruits according to availability but try to keep the layering concept for visual appeal.
  • Make sure each layer is fully frozen before adding the next to maintain distinct colorful layers.
  • Run molds under warm water briefly to make demolding easier, but do not soak to avoid melting.
