For the French Toast Crostini:

  • 1 French baguette (sliced into 1/2-inch thick slices)
  • 4 eggs
  • 1/2 cup heavy cream or whole milk
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter

For the Toppings:

  • 2 cups fresh blueberries
  • 3 oz goat cheese
  • 12 tablespoons fresh minced basil
  • 1/4 cup honey (to drizzle)

Instructions

  1. In a bowl, whisk together the eggs, cream, salt, vanilla, and cinnamon until well blended. You can use a blender or stand mixer for ease.
  2. Melt butter in a large skillet over medium heat. Dip bread slices into the egg mixture, allowing excess to drip off. Cook the soaked bread slices in the skillet over medium-high heat until both sides are golden brown.
  3. Remove the French toast crostini to a plate to cool slightly. They will be softer than traditional crostini.
  4. On a baking sheet, roast the blueberries in the oven at 375°F (190°C) for 15-20 minutes, or until they begin to burst slightly.
  5. Spoon the roasted blueberries onto the French toast crostini. Gently press down with a spoon to burst some of the blueberries.
  6. Sprinkle goat cheese and minced basil over the top of the crostini.
  7. Drizzle honey over the assembled crostini and serve immediately.
