Beef Pot Roast:

  • 1 2-3 lb beef roast
  • 1 large onion, sliced
  • 2 cups beef broth
  • 2 teaspoons kosher salt

  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon thyme

Gravy:

  • 2 tablespoons flour
  • 1/4 cup cold water

Instructions

  1. Prepare the Beef: Remove the roast from the packaging and pat dry with paper towels.
  2. Layer Ingredients: Cut onion into thick slices and place in the bottom of the slow cooker. Place roast on top of onions.
  3. Season: Sprinkle salt, pepper, garlic salt, and thyme over the roast. Pour beef broth around the sides of the roast.
  4. Cook: Cover the slow cooker and cook on high for 6 hours or on low for 8 hours.
  5. Rest and Serve: Remove the roast from the slow cooker and let it rest for 15 minutes. Transfer to a serving platter, spoon over drippings or gravy, then serve.
  6. Make Gravy: Skim off the fat from the drippings. Pour into a sauté pan and heat over medium-low heat. Reduce liquid by 1/3. Create a slurry by mixing flour with cold water. Whisk the slurry into the drippings and simmer until thickened. Season with salt and pepper as needed.
