Scale
Main Ingredients
- 1 bundle fresh spinach, chopped
- 2 – 14 oz. cans artichoke hearts, chopped and drained
- 1 cup sour cream
- 1/2 cup mayonnaise
- 3 tablespoons minced garlic
- 1 cup parmesan cheese
- 2 cups shredded mozzarella cheese
- 8 oz. cream cheese, diced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Serving Suggestions
- Sourdough or baguette bread for serving
- Tortilla chips (optional, for serving)
Instructions
- Prepare Ingredients: Chop the fresh spinach and drain and chop the artichoke hearts. Place both into the slow cooker and stir to combine.
- Add Creamy Components: Add sour cream, mayonnaise, and minced garlic to the slow cooker. Stir the mixture well to distribute ingredients evenly.
- Add Cheeses: Stir in parmesan cheese and shredded mozzarella cheese thoroughly with the other ingredients in the slow cooker.
- Add Cream Cheese & Seasonings: Cut the cream cheese into cubes and arrange them on top of the mixture. Sprinkle salt and pepper over the ingredients.
- Cook the Dip: Cover the slow cooker with its lid and set it to high. When the slow cooker has heated up, stir the mixture every 15 minutes until the cheeses are melted and the spinach is fully incorporated into the dip.
- Serve and Keep Warm: Once the dip is melted and creamy, turn off the slow cooker. Avoid using the keep warm setting as it may burn the dip on the sides. Serve immediately with sliced sourdough, baguette bread, or tortilla chips.
Notes
- Stirring frequently during cooking ensures even melting and prevents burning.
- If you prefer a thicker dip, reduce the amounts of sour cream and mayonnaise slightly.
- Use fresh garlic or pre-minced garlic based on preference for stronger or milder flavor.
- To make the dip ahead, prepare all ingredients and refrigerate in the slow cooker insert; cook just before serving.
- The dip can also be kept warm on low heat but watch carefully to avoid burning the edges.
