For the Sardines
- 1 tbsp olive oil
- 1 garlic clove, chopped
- 1 red chilli, deseeded and chopped
- 1 lemon, zest and juice
- 2 x 120g cans sardines in sunflower oil, drained
- Half small bunch parsley, chopped
For the Toast
- 4 slices brown bread
Instructions
- Heat the oil: Place a frying pan over medium heat and add the olive oil. Allow it to warm up gently before adding the aromatics.
- Sizzle garlic and chili: Add the chopped garlic clove and red chili to the hot oil and sauté briefly until fragrant and softened, about 1-2 minutes.
- Add lemon zest: Stir in the lemon zest to infuse the oil with citrus flavor.
- Warm sardines: Gently add the drained sardines to the pan and heat through, stirring occasionally, for a few minutes until they are warmed but not broken down.
- Toast bread: While the sardines heat, toast the brown bread slices until crispy and golden to provide a sturdy base.
- Add parsley and lemon juice: Remove the pan from heat, stir in the chopped parsley and squeeze over fresh lemon juice to brighten the sardine mixture.
- Assemble and serve: Spoon the sardine mixture evenly over the toasted bread slices and serve immediately for a delicious, flavorful toast.
