  • Yield: 4 servings 1x

Description

A vibrant and easy Spanish-inspired sardine toast recipe featuring garlic, red chili, lemon, and fresh parsley, perfect for a quick nutritious snack or light meal.

Ingredients

Scale

For the Sardines

  • 1 tbsp olive oil
  • 1 garlic clove, chopped
  • 1 red chilli, deseeded and chopped
  • 1 lemon, zest and juice
  • 2 x 120g cans sardines in sunflower oil, drained
  • Half small bunch parsley, chopped

For the Toast

  • 4 slices brown bread

Instructions

  1. Heat the oil: Place a frying pan over medium heat and add the olive oil. Allow it to warm up gently before adding the aromatics.
  2. Sizzle garlic and chili: Add the chopped garlic clove and red chili to the hot oil and sauté briefly until fragrant and softened, about 1-2 minutes.
  3. Add lemon zest: Stir in the lemon zest to infuse the oil with citrus flavor.
  4. Warm sardines: Gently add the drained sardines to the pan and heat through, stirring occasionally, for a few minutes until they are warmed but not broken down.
  5. Toast bread: While the sardines heat, toast the brown bread slices until crispy and golden to provide a sturdy base.
  6. Add parsley and lemon juice: Remove the pan from heat, stir in the chopped parsley and squeeze over fresh lemon juice to brighten the sardine mixture.
  7. Assemble and serve: Spoon the sardine mixture evenly over the toasted bread slices and serve immediately for a delicious, flavorful toast.

Notes

  • Make sure to deseed the red chili if you prefer less heat.
  • Use fresh lemon zest and juice for the brightest flavor.
  • Brown bread adds a nutty flavor and holds up well to the moist sardines.
  • This recipe can be served as a quick snack, appetizer, or light lunch.
