This Spiced French Toast with Cranberry Compote is a delicious and comforting breakfast dish featuring gluten-free bread soaked in a fragrant spiced egg mixture, pan-fried to a golden perfection, and topped with a sweet and tangy homemade cranberry compote. The warm spices and fresh cranberry sauce make it a perfect seasonal treat.

Ingredients

Scale

French Toast Batter

  • 2 Free Range Eggs
  • 2/3 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Cloves
  • 1/4 teaspoon Ground Nutmeg

For Cooking

  • 2 tablespoon Butter
  • 6 slices Gluten-Free Bread

Cranberry Compote

  • 2 cup Frozen Cranberries
  • 1/2 cup Brown Sugar
  • 1/3 cup Orange Juice
  • 1 Cinnamon Stick

Instructions

  1. Prepare the batter: In a large mixing bowl, combine 2 free range eggs, 2/3 cup milk, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground nutmeg. Whisk thoroughly until the mixture is smooth and evenly blended.
  2. Heat the skillet and melt butter: Place a skillet on medium-high heat and add 2 tablespoons of butter. Allow the butter to melt completely and coat the pan to prevent sticking.
  3. Dip bread slices: Take each of the 6 slices of gluten-free bread and dip them into the spiced egg batter, making sure each side and the edges are fully soaked.
  4. Cook the French toast: Place the coated bread slices on the hot skillet. Cook for 3 to 5 minutes on each side, or until the bread is golden brown and cooked through.
  5. Make the cranberry compote: While cooking the French toast, combine 2 cups frozen cranberries, 1/2 cup brown sugar, 1/3 cup orange juice, and 1 cinnamon stick in a small saucepan over medium heat. Simmer for 15 minutes, stirring occasionally, until the mixture thickens and most liquid evaporates. Remove and discard the cinnamon stick.
  6. Serve: Arrange the cooked French toast on plates and generously spoon the warm cranberry compote on top. Serve immediately and enjoy your spiced French toast with cranberry compote.

Notes

  • Use gluten-free bread to keep the dish gluten-free and suitable for sensitive diets.
  • Adjust the level of sweetness in the compote by adding more or less brown sugar to taste.
  • For a dairy-free option, substitute milk with almond or oat milk and use a dairy-free butter alternative.
  • Make sure the skillet is properly heated before cooking to get a nice golden crust on the French toast.
  • The compote can be made ahead and warmed up before serving to save time.
