Cranberry Compote
- 2 cup Frozen Cranberries
- 1/2 cup Brown Sugar
- 1/3 cup Orange Juice
- 1 Cinnamon Stick
Instructions
- Prepare the batter: In a large mixing bowl, combine 2 free range eggs, 2/3 cup milk, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground nutmeg. Whisk thoroughly until the mixture is smooth and evenly blended.
- Heat the skillet and melt butter: Place a skillet on medium-high heat and add 2 tablespoons of butter. Allow the butter to melt completely and coat the pan to prevent sticking.
- Dip bread slices: Take each of the 6 slices of gluten-free bread and dip them into the spiced egg batter, making sure each side and the edges are fully soaked.
- Cook the French toast: Place the coated bread slices on the hot skillet. Cook for 3 to 5 minutes on each side, or until the bread is golden brown and cooked through.
- Make the cranberry compote: While cooking the French toast, combine 2 cups frozen cranberries, 1/2 cup brown sugar, 1/3 cup orange juice, and 1 cinnamon stick in a small saucepan over medium heat. Simmer for 15 minutes, stirring occasionally, until the mixture thickens and most liquid evaporates. Remove and discard the cinnamon stick.
