These spiced turkey burgers offer a flavorful twist on a classic favorite, combining aromatic Madras curry powder, fresh coriander, and garlic in lean turkey mince. For the Burgers

  • 500g turkey mince
  • ½ red onion, grated
  • 1 garlic clove, crushed
  • 2 tsp Madras curry powder
  • Handful chopped coriander
  • 1 egg yolk
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp sunflower oil

To Serve

  • 4 burger buns, split and toasted
  • Salad (lettuce, tomato, cucumber, or your choice)
  • Mango chutney or lime pickle

Optional Madras Curry Powder Substitute

  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • ½ tsp chilli powder

Instructions

  1. Prepare the Mixture: In a large bowl, combine the turkey mince, grated red onion, crushed garlic, Madras curry powder, chopped coriander, and egg yolk. Season with a little salt and freshly ground black pepper. Mix everything thoroughly with your hands until well combined.
  2. Form Patties: Shape the mixture into four even, flat burger patties to ensure they cook evenly.
  3. Cook the Burgers: Heat the sunflower oil in a frying pan over high heat. Once hot, add the patties and cook for about 5 minutes on each side, or until they are cooked through and reach an internal temperature of 74°C (165°F).
  4. Toast the Buns: While the burgers cook, toast the cut sides of the burger buns until lightly golden and crispy.
  5. Assemble the Burgers: Place the fresh salad on the bottom halves of the warmed buns. Add the cooked turkey burger patties on top, then spread with mango chutney or lime pickle to taste. Cover with the top halves of the buns and serve immediately.

  • You can customize the spice level by adjusting the amount of Madras curry powder or chilli powder in the optional mix.
  • Using lean turkey mince keeps the burgers healthy and lower in fat.
