Chickpeas:

  • 1 1/2 cup chickpeas, canned, rinsed and drained
  • 1 tbsp mint, dried
  • 1/2 tsp crushed red pepper
  • 3 garlic cloves, minced
  • 1/2 tsp tomato paste
  • 4 tsp olive oil

Vegetable Salad:

  • 1 cup olives
  • 1 cup of tomatoes
  • 1 cucumber, peeled and chopped
  • 2 scallions, thinly chopped
  • Bunch parsley, thinly chopped
  • 1/2 lemon, juice of
  • 1 1/2 cups cabbage
  • 1 avocado
  • hummus
  • Salt and pepper to taste

Instructions

  1. Prepare the chickpeas: Heat olive oil in a non-stick pan, add chickpeas, mint, crushed red pepper, 2 garlic cloves, and tomato paste. Stir for 3-4 minutes, season with salt and pepper.
  2. Cabbage: Combine cabbage, garlic, olive oil, lemon juice, and salt in a salad bowl.
  3. Tomato cucumber salad: Chop tomatoes, cucumbers, scallions, and parsley. Toss with olive oil and salt.
  4. Arrange: Layer cabbage, chickpeas, tomato cucumber salad, olives, avocado, and hummus in a bowl or on a plate.
