Chickpeas:
- 1 1/2 cup chickpeas, canned, rinsed and drained
- 1 tbsp mint, dried
- 1/2 tsp crushed red pepper
- 3 garlic cloves, minced
- 1/2 tsp tomato paste
- 4 tsp olive oil
Vegetable Salad:
- 1 cup olives
- 1 cup of tomatoes
- 1 cucumber, peeled and chopped
- 2 scallions, thinly chopped
- Bunch parsley, thinly chopped
- 1/2 lemon, juice of
- 1 1/2 cups cabbage
- 1 avocado
- hummus
- Salt and pepper to taste
Instructions
- Prepare the chickpeas: Heat olive oil in a non-stick pan, add chickpeas, mint, crushed red pepper, 2 garlic cloves, and tomato paste. Stir for 3-4 minutes, season with salt and pepper.
- Cabbage: Combine cabbage, garlic, olive oil, lemon juice, and salt in a salad bowl.
- Tomato cucumber salad: Chop tomatoes, cucumbers, scallions, and parsley. Toss with olive oil and salt.
- Arrange: Layer cabbage, chickpeas, tomato cucumber salad, olives, avocado, and hummus in a bowl or on a plate.
