Instructions

  2. Combine Liquids and Gelatin: In a saucepan, combine the champagne, sugar, and lemon juice. Sprinkle the Knox gelatin over the mixture while whisking continuously to prevent clumps.
  3. Heat Mixture: Gently bring the mixture to just below boiling point while whisking to fully dissolve the gelatin and sugar, then immediately turn off the heat and remove from the stove to avoid boiling.
  4. Add Ginger Ale: Pour in the ginger ale and let the mixture sit until the fizz subsides to prevent bubbles in your jello shots. Once settled, transfer the liquid to a measuring glass for easy pouring.
  5. Fill Cups: Pour the gelatin mixture into each cup gradually, covering the strawberries almost completely to let them suspend in the jello.
  6. Chill to Set: Place the filled cups in the refrigerator for 3 to 4 hours, or until the gelatin is fully set and firm to the touch.
