For the streusel:
- 1 ½ cups all-purpose flour
- 1 cup packed brown sugar
- 1 tablespoon cinnamon
- ½ cup unsalted butter (melted)
For the cake:
- 1 ½ cups all-purpose flour
- 1 ¼ teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- ¼ cup milk
- 3 cups chopped fresh strawberries
- 1 large strawberry (diced)
For the glaze:
- 1 cup powdered sugar
- 1 tablespoon heavy cream
- 1 tablespoon lemon juice
Instructions
- For the streusel – In a large mixing bowl, combine the flour, brown sugar, and cinnamon. Add the melted butter and stir to combine. Set aside.
- For the cake – Preheat oven to 350°F. Grease a 9×9 inch round cake pan. Mix dry ingredients. Beat butter and sugar, add eggs and vanilla. Alternate adding flour mixture, sour cream, and milk. Layer batter, streusel, strawberries, and remaining streusel. Bake 45-50 minutes.
- For the glaze – Mash strawberries, add powdered sugar, cream, and lemon juice. Whisk until smooth. Drizzle over cooled cake before serving.
