Strawberry Simple Syrup

  • 2 ½ cups fresh strawberries, hulled and quartered
  • 1 cup sugar
  • 1 cup water

Mocktail

  • 1 lime, cut into 6 wedges
  • 2 tablespoons strawberry simple syrup (from above or to taste)
  • 10 fresh mint leaves
  • 2 fresh strawberries, hulled and sliced
  • Ice cubes or crushed ice
  • Sparkling water, to top up the glass
  • 1 mint sprig, for garnish

Instructions

  1. Make Strawberry Simple Syrup: Add the strawberries, sugar, and water to a medium saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar.
  2. Simmer the Syrup: Reduce the heat to medium-low and let the mixture simmer gently for 20 minutes, allowing the strawberries to infuse the syrup with flavor.
  3. Strain and Cool: Remove the saucepan from heat. Strain the syrup through a fine mesh sieve, pressing the strawberries to extract as much liquid as possible. Allow the syrup to cool completely before using.
  4. Muddle Lime: In a tall glass, add 5 lime wedges and 2 tablespoons of the cooled strawberry syrup. Use a muddler to press the lime wedges gently to release their juice and combine the flavors.
  5. Muddle Mint: Add 10 fresh mint leaves to the glass and muddle very gently to release the mint’s aroma without bruising the leaves, which can cause bitterness.
  6. Add Strawberries and Ice: Add the sliced strawberries into the glass. Fill the glass almost to the top with ice cubes or crushed ice, leaving a little room for mixing.
  7. Top with Sparkling Water: Pour sparkling water to fill the rest of the glass. Use a long-handled spoon to gently stir the ingredients together, mixing evenly without breaking the ice too much.
  8. Prepare Mint Garnish: Slap a fresh mint sprig between your palms a couple of times to release its aromatic oils, then place it on top of the drink for garnish.
  9. Garnish and Serve: Garnish the glass with the remaining lime wedge on the rim. Serve immediately and enjoy your refreshing Strawberry Mojito Mocktail!
