  2. Cook Strawberries: Combine the chopped strawberries, ½ cup granulated sugar, 1 Tbsp lemon juice, and 2 Tbsp water in a pot. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 3-4 minutes, stirring frequently, until the strawberries soften and release their juices. Remove from heat after.
  3. Mix Cornstarch Slurry: In a small bowl, whisk together 1 Tbsp cornstarch and the remaining 2 Tbsp water until smooth. This slurry will help thicken the sauce.
  4. Thicken the Sauce: Pour the cornstarch mixture into the pot with the strawberry mixture and return to heat. Stir continuously and cook for another 1-2 minutes until the sauce thickens to your desired consistency.
