Sweet Green Pepper:

Garlic Clove:

Red Onion:

  • 1/2, chopped

Arugula:

  • 1 cup, chopped

Basil:

Salt, Pepper, Olive Oil

Optional:

  • 1 tbsp Feta, olives, or capers

Instructions

  1. Sear the Zucchini and Peppers: If not already grilled, sear zucchini and peppers in a pan with olive oil and salt for 2-3 minutes on each side.
  2. Prepare the Vegetables: Chop the tomatoes, arugula, sweet green pepper, basil, and red onion. Mince the garlic.
  3. Assemble the Salad: Combine all the chopped vegetables in a bowl. Season with olive oil, salt, and pepper. Adjust seasoning to taste and add lemon juice if desired. Mix in feta, olives, or capers, and serve.
