  • Small bunch basil leaves, ripped into small pieces

  • 1 tbsp vegetable oil
  • 6 mini burger buns
  • Lettuce leaves
  • Tomato slices
  • Tomato ketchup, to serve

Instructions

  1. Preheat the oven: Heat your oven to 200C / 180C fan / Gas 6 to prepare for baking the burgers.
  2. Crush the cornflakes: Place the cornflakes in a freezer bag and gently break them with a rolling pin, aiming for rough flakes rather than powder. Transfer them to a bowl.
  3. Prepare the mince mixture: In a separate bowl, add the beef mince, torn basil leaves, and a pinch of ground pepper. For lean mince, mix in one tablespoon of the beaten egg to help bind the mixture, then combine thoroughly.
  4. Set up dredging stations: Place the plain flour on one plate and the remaining beaten egg on another plate to prepare for coating the burgers.
  5. Shape the burgers: Divide the mince mixture into six equal portions. Shape each portion into a small, firm patty by squashing it in the palm of your hand.
  6. Coat the burgers: Roll each patty first in the flour, then dip it into the beaten egg, and finally coat liberally with the crushed cornflakes. Place coated patties on an oiled baking sheet.
  7. Brush with oil: Lightly brush the tops of the burgers with vegetable oil using a pastry brush to promote crispiness while baking.
  8. Bake the burgers: Place the baking sheet in the center of the preheated oven and bake for 15-20 minutes until the burgers are fully cooked through with a golden, crispy coating.
