Supreme Soy Noodles is a flavorful Asian-inspired stir-fried noodle dish featuring fresh yellow or white noodles sautéed with a savory blend of light and dark soy sauces, oyster sauce, garlic, and green onions. - 500 g / 1 lb fresh yellow or white medium-thickness noodles
Sauce
- 2 tsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp mirin

- 2 tbsp vegetable oil (canola or peanut oil can be used)
- 8 green onions (ends trimmed, cut into 7 cm / 2.5” lengths; white and green parts separated)
- 2 garlic cloves (finely chopped)
- 2 tsp toasted sesame oil
Instructions
- Prepare the Sauce: In a small bowl, combine the light soy sauce, dark soy sauce, oyster sauce, mirin, and toasted sesame oil. Mix well and set aside.
- Cook the Noodles: Cook the fresh noodles according to the package instructions. Once cooked, drain them and rinse briefly under running tap water to prevent sticking. Set aside.
- Sauté Aromatics: Heat the vegetable oil in a large deep non-stick skillet or wok over high heat. Add the white parts of the green onions and stir-fry for about 20 seconds. Then add the chopped garlic and continue to stir for another 10 seconds or until the garlic turns light golden.
- Add Noodles and Sauce: Add the cooked noodles to the skillet, then pour the prepared sauce over them. Toss and stir-fry for about 1.5 minutes to allow the noodles to slightly caramelize, enhancing the flavor. If your stove is not very strong, you may need to cook a little longer.
- Finish with Green Onions: Add the green parts of the green onions and toss for about 20 seconds until just wilted. Serve the noodles immediately while hot.
