Description

This Tater Tot Breakfast Bowl is the ultimate comfort food recipe, combining crispy baked tater tots, savory breakfast sausage, sautéed bell peppers and onions, fluffy baked eggs, and melted cheddar and Monterey Jack cheeses. Perfect for a hearty weekend brunch or a satisfying breakfast, it’s easy to prepare and customizable with your favorite toppings like sour cream or salsa.

Ingredients

Scale

Base

  • 1 (32 ounce) bag frozen tater tots
  • 1 tablespoon olive oil

Sausage and Vegetables

  • 1/2 pound breakfast sausage, removed from casing
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (any color)
  • Salt and pepper to taste

Egg Mixture

  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste

Cheese

  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Optional Toppings

  • Chopped green onions
  • Sour cream
  • Salsa
  • Hot sauce

Instructions

  1. Preheat and bake tater tots: Preheat your oven to 400°F (200°C). Spread the frozen tater tots in a single layer on a baking sheet, drizzle with olive oil, and bake for 20-25 minutes. Be sure to flip them halfway through baking to ensure even browning and crispiness.
  2. Cook sausage and vegetables: While the tots are baking, heat a large skillet over medium heat. Add the breakfast sausage, breaking it up as it cooks. Once browned, drain any excess grease. Add the chopped onions and bell peppers to the sausage and cook until the vegetables are softened, around 5-7 minutes. Season with salt and pepper to taste.
  3. Prepare egg mixture: In a large mixing bowl, whisk the eggs and milk together until well combined. Season with salt and pepper according to your preference.
  4. Assemble the breakfast bowl: Grease a 9×13 inch baking dish. Spread the baked tater tots evenly across the bottom of the dish. Layer the sausage and sautéed vegetable mixture evenly over the tots. Pour the egg mixture over the top, ensuring it covers the sausage and veggies evenly. Sprinkle both the shredded cheddar and Monterey Jack cheeses over the egg layer.
  5. Bake until set: Place the assembled dish into the preheated oven and bake for 25-30 minutes, or until the eggs are fully set and the cheese is melted and bubbly.
  6. Cool and serve: Remove the dish from the oven and allow it to cool for a few minutes. Cut into squares and serve warm. Add optional toppings like chopped green onions, sour cream, salsa, or hot sauce to enhance flavor as desired.

Notes

  • Flipping the tater tots halfway through baking ensures they crisp up evenly without burning.
  • Drain the sausage grease well to avoid a greasy final dish.
  • You can customize the vegetable mix by adding mushrooms, jalapeños, or spinach for extra nutrition.
  • For a lower-fat version, use turkey sausage and reduced-fat cheese.
  • This dish can be assembled the night before and baked fresh in the morning for convenience.
