  • 300g rice noodles
  • 1 tsp sunflower oil
  • 400g turkey breast steaks, cut into thin strips and any fat removed
  • 340g green beans, trimmed and halved
  • 1 red onion, sliced
  • 2 garlic cloves, sliced
  • Juice of 1 lime, plus extra wedges for serving
  • 1 tsp chilli powder
  • 1 red chilli, finely chopped
  • 1 tbsp fish sauce
  • Handful mint, roughly chopped
  • Handful coriander, roughly chopped

Instructions

  1. Prepare the noodles: Cook the rice noodles according to the package instructions until just tender, then drain and set aside.
  2. Cook the turkey: Heat the sunflower oil in a non-stick pan over high heat. Add the turkey strips and fry for 2 minutes until they begin to brown and are nearly cooked through.
  3. Add vegetables: Add the green beans, sliced red onion, and sliced garlic to the pan. Continue cooking and stirring for 5 more minutes until the vegetables are crisp-tender and the turkey is fully cooked.
  4. Season the stir-fry: Stir in the lime juice, chili powder, finely chopped red chili, and fish sauce. Cook for an additional 3 minutes, allowing the flavors to meld and the sauce to slightly thicken.
  5. Combine with noodles and herbs: Add the cooked rice noodles and chopped mint and coriander to the pan. Toss everything together thoroughly to ensure the noodles are well coated and the herbs are evenly distributed.
  6. Serve: Serve the stir-fry hot with extra lime wedges on the side for an added burst of fresh citrus.

Notes

  • For a spicier dish, increase the amount of fresh red chili or add a pinch of chili flakes.
  • You can substitute turkey with chicken breast if preferred.
