For the Coconut Cream:
- 1 (13.5 ounce) can full-fat coconut milk, refrigerated overnight
For the Slush:
- 6 cups frozen pineapple chunks
- 1/2 cup white rum (or more to taste)
- 1/4 cup cream of coconut
- 2 tablespoons lime juice, freshly squeezed
- 1/4 cup pineapple juice (optional, for a smoother blend)
- Lime wedges, for garnish (optional)
- Pineapple wedges, for garnish (optional)
- Toasted coconut flakes, for garnish (optional)
Instructions
- Prepare the Coconut Cream: Refrigerate the can of full-fat coconut milk for at least 8 hours (or overnight). Open carefully and scoop out the thick coconut cream, leaving the watery liquid behind. Reserve the coconut water for other uses if desired.
- Blend the Slush: Combine frozen pineapple, coconut cream, rum, cream of coconut, and lime juice (plus pineapple juice if using) in a high-powered blender.
- Blend on low, gradually increasing to high, stopping to scrape down the sides as needed.
- Blend until smooth and slushy. If too thick, add pineapple juice or coconut water, 1-2 tablespoons at a time, until desired consistency is reached.
- Taste and Adjust: Taste and adjust flavors as needed. Add more cream of coconut for sweetness, lime juice for tartness, or rum for a stronger flavor. Blend again after adjustments.
- Serve and Garnish: Pour into chilled glasses. Garnish with lime wedges, pineapple wedges, and toasted coconut flakes, if desired.
