Topping
- 185g can tuna in spring water, drained
- ½ red onion, finely sliced
- 1 small red chilli, deseeded and chopped
- Juice of 1 lime
- 6 tbsp Greek yogurt
- Handful coriander leaves
Optional
- For a veggie alternative: swap the tuna for some crumbled feta cheese
Instructions
- Prepare Sweet Potatoes: Scrub the sweet potatoes thoroughly and prick them all over with a fork to ensure even cooking. Place them on a microwave-safe plate.
- Cook Sweet Potatoes: Microwave the sweet potatoes on High for 18-20 minutes or until they are tender when pierced with a fork.
- Split and Arrange: Once cooked, carefully split each sweet potato in half and place them cut-side up on a serving plate.
- Prepare Topping: Flake the drained tuna with a fork and divide it evenly among the sweet potato halves. Top each with finely sliced red onion and chopped red chili.
- Add Lime and Yogurt: Squeeze fresh lime juice evenly over each jacket. Add a generous dollop of Greek yogurt on top of each to add creaminess and balance the flavors.
- Garnish and Serve: Scatter fresh coriander leaves over the jackets for a fresh finish. Serve immediately while sweet potatoes are warm.
