  • 185g can tuna in spring water, drained

  • 1 small red chilli, deseeded and chopped
  • Juice of 1 lime
  • 6 tbsp Greek yogurt
  • Handful coriander leaves

Optional

  • For a veggie alternative: swap the tuna for some crumbled feta cheese

Instructions

  1. Prepare Sweet Potatoes: Scrub the sweet potatoes thoroughly and prick them all over with a fork to ensure even cooking. Place them on a microwave-safe plate.
  2. Cook Sweet Potatoes: Microwave the sweet potatoes on High for 18-20 minutes or until they are tender when pierced with a fork.
  3. Split and Arrange: Once cooked, carefully split each sweet potato in half and place them cut-side up on a serving plate.
  4. Prepare Topping: Flake the drained tuna with a fork and divide it evenly among the sweet potato halves. Top each with finely sliced red onion and chopped red chili.
