  • 6 slices Turkey Bacon, chopped into small pieces
  • 1/2 cup Shredded Cheddar Cheese

  • 1 package Puff Pastry

Instructions

  1. Prepare Egg Mixture: In a bowl, scramble 6 small eggs with a dash of salt and ground black pepper. Add 1 teaspoon of shredded cheddar cheese to the mixture if desired, and mix until completely combined.
  2. Cook Scrambled Eggs: Pour most of the egg mixture into a pan and cook over medium heat, stirring occasionally, until the eggs are fully scrambled and cooked through. Reserve some of the raw egg mixture to use later for basting the empanadas.
  3. Prepare Turkey Bacon: Chop the 6 slices of turkey bacon into small pieces suitable for filling.
  4. Cut Puff Pastry Shapes: Roll out the puff pastry sheet on a clean surface. Using a turkey-shaped cookie cutter, cut out turkey shapes from the puff pastry dough.
  5. Fill Empanadas: Place a portion of the scrambled eggs, chopped turkey bacon, and shredded cheddar cheese on one side of each turkey-shaped puff pastry piece.
  6. Seal the Empanadas: Fold the dough over the filling, creating a pocket, and use a fork to press and seal the edges. Make two small punctures at the top of each empanada to allow steam to escape during baking.
  7. Prepare for Baking: Place the sealed empanadas on a parchment-lined baking sheet. Using the reserved raw egg mixture, baste the tops of the empanadas to give them a golden finish.
