Instructions

  1. Preheat the oven: Set your oven to 350 degrees Fahrenheit (180 degrees Celsius) to prepare it for baking the muffins.
  2. Prepare egg mixture: In a bowl, beat 4 large eggs until smooth. Season with salt and freshly ground black pepper according to your taste preferences.
  3. Grease muffin tin and assemble: Lightly grease your muffin tin with vegetable oil or butter to prevent sticking. Pour the beaten egg mixture into each muffin cup halfway. Then add your desired fillings — chopped red and green bell peppers, fresh spinach, chopped cooked bacon, and halved cherry tomatoes — into each cup. Finally, sprinkle shredded cheese on top of each muffin cup.
  4. Bake the muffins: Place the muffin tin in the preheated oven and bake for 15 to 20 minutes, or until the eggs are fully set and the cheese is melted and lightly golden on top.
