The combination of smooth whipped feta and Greek yogurt is brightened with fresh lemon zest and juice, while the roasted cherry tomatoes and garlic add a rich, caramelized sweetness that complements the dip beautifully. Drizzled with extra virgin olive oil and fresh oregano, this Mediterranean-inspired dip is easy to prepare and perfect for serving with crusty bread, crackers, or fresh vegetables.
Ingredients
Dip Ingredients
- 8 oz feta cheese (use a block, not crumbles)
- ¼ cup full-fat Greek yogurt
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- 2 tablespoons extra virgin olive oil
Roasted Tomatoes and Garlic
- 1 pint cherry tomatoes
- 6 cloves garlic (peeled)
- ¼ cup extra virgin olive oil
- ¼ teaspoon kosher salt
Garnish
- 1 tablespoon fresh oregano (or herb of choice)
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) to prepare for roasting the tomatoes and garlic.
- Prepare Tomatoes and Garlic: Place cherry tomatoes and peeled garlic cloves in a baking dish. Drizzle with ¼ cup extra virgin olive oil, then sprinkle with ¼ teaspoon kosher salt to enhance flavor.
- Roast: Bake in the preheated oven for about 15 minutes or until the tomatoes have burst and the garlic becomes soft and caramelized. This brings out their natural sweetness and depth of flavor.
- Cool Roasted Ingredients: Remove the baking dish from the oven and let the roasted tomatoes and garlic cool for 5 minutes to avoid breaking down the dip too much when combining.
- Blend the Dip: In a food processor, combine the block of feta cheese, Greek yogurt, lemon zest, lemon juice, and 2 tablespoons of extra virgin olive oil. Blend until the mixture is smooth.
- Finish Whipping: Stop and scrape down the sides of the processor bowl with a rubber spatula. Continue blending until the dip reaches a super smooth and creamy consistency.
- Assemble and Serve: Transfer the whipped feta mixture into a serving bowl. Top evenly with the roasted tomatoes and garlic, including some of the flavorful olive oil left in the baking dish. Garnish with fresh oregano or your herb of choice for a fresh finish.
Notes
- Use a block of feta cheese rather than crumbled feta to achieve a creamier, smoother dip texture.
- For extra creaminess, make sure to use full-fat Greek yogurt.
- Adjust lemon juice and zest to taste for more or less citrus brightness.
- The roasted olive oil left in the baking dish is infused with garlic and tomato flavors; be sure to drizzle some over the top.
- This dip pairs wonderfully with warm pita bread, fresh veggies, or crispy crackers.
- Can be refrigerated in an airtight container for up to 3 days; bring to room temperature before serving.
- Feel free to substitute oregano with thyme, basil, or parsley according to your preference.
