  • 3 tbsp grapeseed oil
  • 100g plain flour
  • 2 tsp cornflour
  • 100g golden caster sugar
  • Pinch of salt
  • ½ tbsp cold water

Instructions

  1. Prep the Oven and Fortunes: Preheat your oven to 180°C (160°C fan) or gas mark 4. Line a large baking sheet with a silicone baking mat. Prepare your fortunes by writing messages on small paper strips measuring approximately 6cm by 1cm.
  2. Make the Batter: Using an electric whisk, combine the egg whites, vanilla extract, grapeseed oil, and ½ tbsp cold water. Whisk for about 30 seconds until frothy. In a separate bowl, sift together the plain flour, cornflour, golden caster sugar, and a pinch of salt. Gradually add the sifted dry ingredients to the egg white mixture while whisking until you achieve a smooth batter. Chill the batter in the refrigerator for 1 hour to firm up.
  3. Shape and Bake Cookies: Spoon ½ tablespoon of the chilled batter onto the prepared baking sheet. Spread the batter carefully using a small palette knife into thin 8cm circles. Bake only two cookies at a time, spacing them well apart, for 8 minutes or until the edges turn golden.
  4. Form the Fortune Cookies: While the cookies are hot, carefully lift one onto a board and flip it over. Place a fortune paper in the center, fold the cookie in half, and pinch the edges to seal. Then, gently drape the cookie over the rim of a mug or pan and pull the ends downward to create the traditional fortune cookie shape. Hold for 10 seconds to set the shape before transferring to a muffin tin to cool completely. Repeat with the second cookie and continue the process with the remaining batter.
  5. Melt Chocolate and Decorate: Melt the white chocolate either in a microwave in short bursts or in a heatproof bowl placed over simmering water. Pour sprinkles into small bowls for easy dipping. Dip the two ends of each fortune cookie into the melted white chocolate, allow any excess to drip off, then immediately dip into sprinkles for decoration. Place cookies on a board to dry and set.
  6. Storage: Once fully cooled, store the fortune cookies in an airtight container to maintain their crispness. They will keep well for up to three days.
