Ingredients
Scale
Cauliflower and Seasoning
- 1 large cauliflower, stem and leaves removed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon pepper
Toppings
- Buffalo wing sauce, for drizzling (amount as desired)
- ⅓ cup crumbled blue cheese
- ⅓ cup fresh cilantro, chopped
- 2 tablespoons chopped chives
- 2 green onions, thinly sliced
Instructions
- Preheat and Prepare Cauliflower: Preheat your oven to 375 degrees Fahrenheit. Gently remove the stem and outer leaves from the cauliflower, keeping the head intact for roasting.
- Season and Coat: In a small bowl, mix together garlic powder, smoked paprika, salt, and pepper. Place the cauliflower in a large oven-safe skillet (cast iron preferred) and drizzle evenly with olive oil. Rub the oil all over the cauliflower until fully coated, then sprinkle the spice mixture evenly over it.
- Cover and Roast: Cover the skillet and top of the cauliflower with aluminum foil to lock in moisture. Roast in the preheated oven for 30 minutes.
- Uncover and Continue Roasting: After 30 minutes, remove the foil and continue roasting the cauliflower uncovered for an additional 1 hour, or until the cauliflower is tender when pierced with a fork.
- Finish and Garnish: Take the roasted cauliflower out of the oven and drizzle generously with buffalo wing sauce all over. Sprinkle crumbled blue cheese on top followed by fresh cilantro, chopped chives, and thinly sliced green onions for vibrant flavor and color.
- Slice and Serve: Carefully slice the cauliflower into wedges and serve warm as a flavorful appetizer or side dish.
Notes
- Use a cast iron skillet or any large oven-safe pan to ensure even roasting and easy handling.
- Adjust the amount of buffalo wing sauce according to your preferred spice level.
- For a milder option, substitute buffalo sauce with a mild wing sauce or barbecue sauce.
- To make this recipe vegan, omit the blue cheese or use a vegan cheese alternative.
- Make sure the cauliflower is roasted until tender; cooking times may vary slightly depending on the size of the cauliflower.
