- Preheat the oven: Set your oven to 200°C (180°C fan) or gas mark 6, and line a baking sheet with baking parchment to prevent sticking and facilitate even baking.
- Prepare the dough: Unroll the croissant dough carefully and use a sharp knife to separate it into individual triangular pieces, which will form the base of each croissant.
- Add the filling: Scatter the crumbled feta and half of the za’atar (½ tbsp) evenly over the surface of the dough triangles. Press the filling gently into the dough using your hands to ensure it adheres well and stays inside the croissants during baking.
- Shape the croissants: Starting from the wide base of each triangle, roll the dough upwards towards the narrow point, forming a typical croissant shape. Slightly bend the ends inward to secure the shape and prevent unrolling while baking.
- Prepare for baking: Place the croissants on the lined baking tray with sufficient space between them. Brush the tops generously with the beaten egg to achieve a shiny, golden finish. Then sprinkle the remaining za’atar on top for added flavor and a beautiful presentation.
- Bake: Bake the croissants in the preheated oven for 15 to 20 minutes, or until they are deep golden brown, flaky, and puffed up, indicating they are fully cooked and crisp.
