Instructions
- Prepare Zucchini Noodles: Using a spiralizer, create strands from the zucchini to make zucchini noodles or ‘zoodles.’
- Sauté Aromatics and Tomatoes: In a skillet, heat the extra-virgin olive oil over medium-high heat. Add the cherry tomatoes, garlic, crushed red pepper flakes, dried oregano, and capers, cooking and stirring for about 1 minute to release the flavors.
- Cook Zoodles: Add the zucchini noodles to the skillet and toss them with the tomato mixture. Cook for 2 to 3 minutes until the zoodles are tender but still retain some bite.
- Plate and Garnish: Transfer the cooked zoodles to serving plates. Sprinkle pine nuts, Parmesan cheese, and fresh basil on top to finish the dish.
