Ingredients
Scale
Dressing
- 1 1/2 tbsp soy sauce, light or ordinary
- 3 tbsp rice vinegar
- 1 tbsp mirin
- 2 tsp brown sugar
- 2 tsp ginger, minced
- 1 clove garlic, minced
Beef
- 200g (7 oz) rump or sirloin beef steak, excess fat trimmed
- 1 tsp vegetable oil
Noodles and Vegetables
- 6 oz (180g) soba noodles
- 6 oz (200g) green beans, trimmed
Garnish
- 1 scallion/shallot, finely sliced
- 1 tbsp crispy Asian shallots
- 2 1/2 tbsp peanut oil (for cooking beef)
Instructions
- Prepare Steak: Take the steak out of the fridge 30 minutes prior to cooking (or 15 minutes if it’s hot outside) to reach room temperature, which helps it cook more evenly.
- Make Dressing: Combine the soy sauce, rice vinegar, mirin, brown sugar, minced ginger, and garlic in a jar. Shake well to mix all ingredients thoroughly, creating a balanced and flavorful dressing.
- Cook Steak: Heat peanut oil in a skillet over high heat until it’s smoking hot. Cook the steak to your liking; for medium-rare, sear the rump steak for 2 minutes on the first side and 1 minute 45 seconds on the second side to lock in juices and flavor.
- Rest and Slice Steak: Transfer the cooked steak to a plate and loosely cover with foil. Let it rest for 5 minutes to allow the juices to redistribute. Then, slice the steak thinly against the grain for tender pieces.
- Cook Noodles and Beans: Bring a pot of water to a boil. Cook soba noodles according to the package instructions, usually 5 minutes. Add the trimmed green beans during the last minute of cooking to keep them tender-crisp.
- Drain and Rinse: Drain the noodles and green beans, then rinse under cold water to stop the cooking process and cool them. Separate green beans roughly from the noodles for better texture and presentation.
- Assemble Bowl: Divide the soba noodles evenly between two bowls. Top with green beans and then the sliced steak. Drizzle the prepared dressing over the steak and noodles to infuse flavor, then garnish with finely sliced scallions and crispy Asian shallots for crunch and freshness.
Notes
- Note 1: Use light or ordinary soy sauce depending on desired saltiness.
- Note 2: Rice vinegar adds acidity to balance the flavors.
- Note 3: Mirin provides a subtle sweetness and depth; if unavailable, substitute with a mix of white wine and sugar.
- Note 4: Choose good-quality rump or sirloin steak for best texture and flavor; trim excess fat for a leaner dish.
- Note 5: Use soba noodles for their nutty flavor and quick cooking time.
- Note 6: Crispy Asian shallots add texture and flavor; can be found in Asian grocery stores or made at home.
