Instructions
- Slice Chorizo: Cut chorizo into 8mm (1/3 inch) thick slices on a slight angle to increase surface area and ensure even cooking.

- Make Thickener: In a small bowl, mix the cornflour with water or pineapple juice until smooth to create a slurry for thickening the sauce.
- Cook Chorizo: Heat oil in a skillet over medium-high heat. Add chorizo slices and cook until they turn golden brown on both sides, approximately 3 minutes total.
- Add Sauce and Simmer: Pour the prepared sauce over the cooked chorizo in the skillet. Let it simmer gently for 3 minutes to allow the flavors to meld.
- Thicken Sauce: Quickly stir in the cornflour slurry and continue to simmer for 45 seconds to 1 minute, or until the sauce thickens to your desired consistency.
- Serve: Transfer the chorizo bites with sauce to a serving bowl, garnish with parsley if desired, and serve immediately with toothpicks for easy picking.
