Description

Chorizo Bites in Sweet & Spicy Sauce are a flavorful appetizer featuring golden-browned chorizo slices coated in a tangy pineapple-infused sauce with a perfect balance of sweetness and heat. Quick to make in a skillet, these bite-sized treats are perfect for parties or casual snacking.

Ingredients

Scale

Sauce

  • 3/4 cup pineapple juice
  • 2 tsp ketchup (or Australia/UK tomato sauce)
  • 2 tsp+ hot sauce of choice (e.g., Frank’s, adjust to taste)
  • 2 tbsp packed brown sugar
  • 1 garlic clove, finely chopped or minced
  • 1/4 tsp salt
  • Pepper, to taste

Thickener

  • 1 1/2 tsp cornflour (cornstarch)
  • 1 tbsp water or pineapple juice

Main

  • 4 chorizo sausages (approx. 600 g / 1.2 lb)
  • 2 tsp oil
  • Parsley for garnish (optional)
  • Toothpicks for serving

Instructions

  1. Slice Chorizo: Cut chorizo into 8mm (1/3 inch) thick slices on a slight angle to increase surface area and ensure even cooking.
  2. Prepare Sauce: In a bowl, combine pineapple juice, ketchup, hot sauce, brown sugar, finely chopped garlic, salt, and pepper. Mix well to create the sweet and spicy sauce.
  3. Make Thickener: In a small bowl, mix the cornflour with water or pineapple juice until smooth to create a slurry for thickening the sauce.
  4. Cook Chorizo: Heat oil in a skillet over medium-high heat. Add chorizo slices and cook until they turn golden brown on both sides, approximately 3 minutes total.
  5. Add Sauce and Simmer: Pour the prepared sauce over the cooked chorizo in the skillet. Let it simmer gently for 3 minutes to allow the flavors to meld.
  6. Thicken Sauce: Quickly stir in the cornflour slurry and continue to simmer for 45 seconds to 1 minute, or until the sauce thickens to your desired consistency.
  7. Serve: Transfer the chorizo bites with sauce to a serving bowl, garnish with parsley if desired, and serve immediately with toothpicks for easy picking.

Notes

  • Adjust the hot sauce quantity to make the sauce as mild or spicy as you prefer.
  • If you want gluten free, ensure the ketchup and hot sauce used are gluten free, and use pure cornstarch.
  • Chorizo can be substituted with a spicy sausage if desired, but the flavor profile will change.
  • Serve these bites warm for the best taste experience.
