The image shows a serving of fried rice on a white plate with a brown rim, placed on a white marbled surface. The fried rice has three noticeable layers: the base layer is light yellow cooked rice mixed with small pieces of scrambled egg; the second layer consists of finely chopped green herbs sprinkled evenly across the rice; the top layer is a drizzle of reddish-orange sauce laid in thin lines over the herbs and rice. A half-cut lime wedge rests on the right side of the plate. Next to the plate, there is a white plate with two lime halves and some fresh green herbs. To the upper left, a black pan holds more of the same yellow fried rice with green herbs, and a golden spoon rests inside it. The overall colors are warm yellows, greens, and reds against the white and brown dishware, set on a white marbled surface. Photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 3 leeks
  • Sunflower or vegetable oil, for frying
  • 4 garlic cloves, grated
  • 2 tbsp ginger, peeled and grated
  • 1 tbsp caster sugar
  • 1½ tbsp soy sauce
  • 2 tsp fish sauce
  • 1½ tbsp sriracha, plus extra to serve
  • 500g cooked basmati or jasmine rice
  • 2 eggs, beaten
  • 100g white crabmeat
  • 1 lime, ½ juiced, ½ cut into wedges or cheeks to serve
  • Small handful of coriander, to serve

Instructions

  1. Step 1: Cut the leeks in half lengthwise, rinse thoroughly under cold running water to remove any dirt between the layers, then thinly slice.
  2. Step 2: Heat enough oil in a wok or deep frying pan to come a few centimetres up the side over medium heat. When hot, carefully drop in the green ends of the leeks and fry for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on kitchen paper. Season with salt and set aside.
  3. Step 3: Pour away all but 1–2 tablespoons of the oil from the pan. Add the remaining leeks, garlic, and ginger and stir-fry over medium heat for a few minutes until softened.
  4. Step 4: In a bowl, mix together the caster sugar, soy sauce, fish sauce, and sriracha. Add this mixture to the pan along with the cooked rice. Stir-fry for a few minutes until the rice breaks apart and mixes well with the flavors.
  5. Step 5: Make a well in the center of the rice and pour in the beaten eggs. Let them set for about a minute, then scramble and mix into the rice evenly.
  6. Step 6: Gently fold in the white crabmeat and the juice of half the lime. Remove from heat.
  7. Step 7: Serve the crab-fried rice topped with crispy leeks and coriander. Garnish with lime wedges and extra sriracha on the side for added heat.

Tips & Variations

  • Use day-old rice for best frying results, as it prevents the dish from becoming mushy.
  • Swap crabmeat for cooked shrimp or shredded cooked chicken if preferred.
  • For extra crunch, add toasted cashews or peanuts when serving.
  • Adjust the amount of sriracha to suit your preferred spice level.
  • To save time, prepare the crispy leeks ahead and store in an airtight container until ready to serve.

Storage

Store any leftover crab-fried rice in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan over medium heat, stirring occasionally to heat evenly. Avoid reheating in the microwave for longer than necessary, as it may affect the rice texture.

How to Serve

The image shows a dish of fried rice served on two white plates, each with a layer of golden-brown rice mixed with small green herbs and topped with a drizzle of red sauce and chopped green herbs. One plate is positioned near the bottom center with a lime wedge on the side, while the other plate is towards the upper right. On the left side of the image, a black skillet holds more fried rice with visible green herbs, and a metal spoon rests inside it. To the right of the skillet, a separate white plate contains two lime halves and some fresh cilantro leaves. The background surface is white marbled, and a gold fork and knife are placed next to the plate at the bottom center. photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use fresh crab instead of canned crabmeat?

Yes, fresh cooked crab meat works wonderfully in this recipe and will add an even fresher flavor. Just ensure it is fully cooked and picked clean of shells before adding.

Is it necessary to add fish sauce?

Fish sauce adds a deep umami flavor that balances the sweetness and heat, but if you prefer, it can be omitted or replaced with a little soy sauce for a milder taste.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

This fragrant chilli crab-fried rice recipe combines the delicate sweetness of white crabmeat with aromatic garlic, ginger, and a spicy sriracha kick. Crispy fried leeks add a delightful texture contrast, while lime and coriander lend fresh, zesty notes. Perfect as a flavorful and vibrant one-pan meal inspired by Asian stir-fry traditions.

Ingredients

Scale

Vegetables and Aromatics

  • 3 leeks
  • 4 garlic cloves, grated
  • 2 tbsp ginger, peeled and grated
  • Small handful of coriander, to serve
  • 1 lime, ½ juiced, ½ cut into wedges or cheeks to serve

Sauces and Condiments

  • 1 tbsp caster sugar
  • 1½ tbsp soy sauce
  • 2 tsp fish sauce
  • 1½ tbsp sriracha, plus extra to serve

Main Ingredients

  • 500g cooked basmati or jasmine rice
  • 2 eggs, beaten
  • 100g white crabmeat

Frying

  • Sunflower or vegetable oil, for frying

Instructions

  1. Prep the leeks: Cut the leeks in half lengthwise and rinse thoroughly under cold running water to remove any trapped dirt. Then thinly slice the leeks, separating the green ends from the white parts.
  2. Fry the crispy leeks: Heat enough sunflower or vegetable oil in a wok or deep frying pan to come a few centimeters up the side, over medium heat for several minutes until hot. Carefully drop the green ends of the leeks into the oil and fry for 2-3 minutes, until golden brown and crispy. Use a slotted spoon to transfer them to kitchen paper to drain and season with salt. Set aside for serving.
  3. Stir-fry aromatics: Pour away all but 1-2 tablespoons of the oil from the pan. Add the remaining leeks (white parts), grated garlic, and grated ginger to the pan. Stir-fry over medium heat for a few minutes until softened and fragrant.
  4. Add sauces and rice: In a small bowl, mix caster sugar, soy sauce, fish sauce, and 1½ tablespoons sriracha. Pour this mixture into the pan with the aromatics, then add the cooked rice. Stir-fry for several minutes, breaking up any clumps, to evenly coat the rice with the sauce and heat through.
  5. Cook the eggs: Push the rice mixture to the sides of the pan to create a space in the center. Pour the beaten eggs into this center and let them set for about a minute. Then scramble the eggs, mixing them through the rice to combine fully.
  6. Add crab and lime: Gently fold in the white crabmeat and the juice of half the lime. Stir just to combine and warm the crab through without breaking it up too much.
  7. Serve: Transfer the fried rice to serving plates, scatter with fresh coriander and the crispy fried leeks. Serve immediately with lime wedges and extra sriracha on the side for added zest and spice.

Notes

  • Use day-old cooked rice or rice cooled in the fridge for best texture and to prevent clumping.
  • Adjust the amount of sriracha according to your heat preference.
  • Crispy leeks can be fried ahead of time and kept dry in an airtight container to maintain crunch.
  • White crabmeat is delicate; handle gently when folding into the fried rice to preserve its texture.
  • This recipe works well with either basmati or jasmine rice, depending on your fragrance preference.
