Instructions

  1. Sauté Onions and Tomalley: Melt butter over medium heat in a large pot. Add diced onions and optional lobster tomalley and coral. Sauté for about 5 minutes, until the onions soften and become translucent, releasing a fragrant aroma.
  2. Add Sherry and Stock: Pour in the dry sherry and lobster stock, stirring well. Let the mixture simmer gently for 3 to 5 minutes to meld the flavors together.
  3. Incorporate Lobster Meat: Add the cooked lobster meat to the pot. Allow it to simmer for a few minutes so the lobster absorbs the flavors without overcooking and becoming tough.
  4. Add Heavy Cream: Slowly stir in 2 cups of heavy cream, taking care not to boil the stew to prevent curdling. Stir gently and taste for seasoning. If you want a richer, creamier stew, add up to an additional cup of heavy cream, increasing the total to 3 cups.
  5. Serve and Garnish: Ladle the stew into individual bowls. Add a small dollop of butter on top to melt and enhance the richness. Sprinkle with a pinch of paprika and chopped chives, then season with salt and pepper as desired.
