  • 300g penne
  • Grated or shaved parmesan, to serve

Instructions

  1. Step 1: Heat a large, wide frying pan over medium heat. Crumble in the sausage meat and add the fennel seeds. Fry for a few minutes until the sausage is golden and the fat has released, stirring often to break up the meat.
  2. Step 2: Add the sliced mushrooms and cook for another few minutes until they start to soften.
  3. Step 3: Pour in the red wine if using, allowing it to bubble for about one minute.
  4. Step 4: Stir in the tomato pasta sauce and heat through until it starts bubbling.
  5. Step 5: Meanwhile, bring a large pot of salted water to a boil and cook the penne according to the package instructions. Drain once cooked.
  6. Step 6: Add the drained penne to the sauce and stir well until the pasta is completely coated.
  7. Step 7: Divide the pasta between four plates and finish with a generous sprinkling of grated or shaved parmesan.

  • Using the meat from good-quality sausages adds lots of flavour without extra seasoning, but feel free to adjust herbs and spices to your taste.
