  • Author: Sophie
  • Total Time: 5 minutes
  • Yield: Enough dressing for 4 servings of salad
  • Diet: Vegetarian

Description

A versatile and flavorful salad dressing made with vinegar, olive oil, mustard, garlic, lemon zest, honey, and herbs. Perfect for leafy green salads or to dress steamed, boiled, or roasted vegetables. Easy to prepare by shaking ingredients together and ideal for enhancing fresh vegetables with a balanced tangy, sweet, and savory taste.

Ingredients

Scale

Main Ingredients

  • 1 tbsp any vinegar or lemon juice (cider vinegar preferred)
  • 3 tbsp extra virgin olive oil (or other neutral oil)
  • 1/2 tsp Dijon mustard (or other non-spicy smooth mustard)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/21 small garlic clove, pressed through crusher or smashed
  • 1 tsp lemon zest
  • 1/4 tsp sugar
  • 1 tsp honey

Optional Ingredients

  • Finely chopped fresh herbs
  • 1/2 tsp dried herbs
  • Pinch of red pepper flakes

Instructions

  1. Combine Ingredients: Place all dressing ingredients, including optional flavorings, into a jar.
  2. Shake Well: Secure the lid tightly and shake the jar vigorously until the mustard dissolves and the ingredients are well emulsified.
  3. Serve: Use the dressing to dress fresh salad leaves or garden salad containing about 4 big handfuls of lettuce, suitable for 4 people.
  4. Storage: Excluding garlic and fresh herbs, store the dressing in the fridge where it will keep for several weeks. Shake well before each use.
  5. Use Tips: For best results, ensure salad leaves are dry so the dressing adheres properly. Also great drizzled over steamed, boiled, or roasted vegetables while still hot to enhance absorption. Toss well just before serving.

Notes

  • Note 1: The choice of vinegar can be varied based on preference; cider vinegar adds a pleasant tartness.
  • Note 2: Garlic can be adjusted to taste, pressing or smashing it releases more flavor.
  • Note 3: Sugar and honey balance the acidity and add a touch of sweetness to the dressing.
  • Shake the dressing well before each use to maintain texture and flavor balance.
  • If making a bulk batch, omit fresh garlic and herbs when storing to prevent spoilage.
