Ingredients

  • 100g mixed nuts (whole hazelnuts, pistachios, almonds, and pecans)
  • 15 cardamom pods, or ½ tsp ground cardamom
  • 50ml vegetable oil
  • 100ml maple syrup
  • 75ml honey
  • 3 balls of stem ginger, chopped, plus 2 tbsp syrup
  • 2 tsp vanilla extract
  • 300g rolled oats
  • 50g mixed seeds (sunflower, pumpkin, and linseed)
  • 1 tsp cinnamon
  • 50g soft dried apple rings, roughly chopped
  • 50g raisins or dried cranberries

Instructions

  1. Step 1: Preheat the oven to 160°C (140°C fan) or gas mark 3, and line a large baking tray with baking parchment.
  2. Step 2: Roughly chop the mixed nuts, keeping plenty of chunky pieces for texture.
  3. Step 3: Crack open the cardamom pods and gently grind the seeds with a pestle and mortar to release their aroma. If using ground cardamom, measure ½ teaspoon.
  4. Step 4: In a large bowl, mix together the vegetable oil, maple syrup, honey, stem ginger syrup, and vanilla extract.
