- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce (or hoisin sauce)
- 2 tsp hoisin sauce (or more oyster sauce)
- 1 tbsp mirin

- 2 packets ramen or other instant noodles, uncooked (discard seasoning)
- 1.5 tbsp vegetable oil (or other neutral flavoured oil)
- 400g / 14 oz mushrooms, sliced (any type)
- 2 garlic cloves, minced
- 2 tsp sesame oil (or more oil)
- 5 green onion stems (shallots/scallions), separated into white/pale green parts and green parts
- 1 1/4 cups (315 ml) water, plus more as needed
Instructions
- Prepare the sauce: In a small bowl, mix together the dark soy sauce, oyster sauce, hoisin sauce, and mirin until well combined to create the flavorful sauce base.
- Prep green onions: Cut the green onions into 5cm (2″) lengths, separating the white and pale green parts from the green parts to be added at different stages of cooking.
- Cook mushrooms: Heat the vegetable oil in a large skillet over high heat. Add the sliced mushrooms and cook for 3 minutes until they begin to soften.
- Add garlic and sesame oil: Add the minced garlic and sesame oil to the skillet, cooking until the mushrooms and garlic turn golden and fragrant.
- Add sauce and white parts of green onions: Pour in the prepared sauce and stir quickly. Then add the white and pale green parts of the green onions, cooking another minute until the mushrooms start to caramelize.
- Create a well in the skillet: Push the mushrooms to the side of the skillet to create a large well in the center for cooking the noodles.
- Add water and noodles: Pour in 1 1/4 cups water and add the uncooked ramen noodle cakes, pressing them down gently into the water.
- Cook noodles: Let the noodles cook for 45 seconds, then flip them carefully. Cook an additional 30 seconds, then break up the noodles with a spatula or chopsticks to allow even cooking and mixing.
- Toss with green onions and adjust sauce consistency: Add the green parts of the green onions and toss everything together well. Add more water as needed to achieve a nice saucy consistency.
- Serve immediately: Transfer to serving plates and enjoy your hot, savory Asian Mushroom Ramen Noodles right away!

- Note 1: Use any type of instant noodles such as ramen or other quick-cooking varieties but discard the seasoning packet.
