Description

  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce (or hoisin sauce)
  • 2 tsp hoisin sauce (or more oyster sauce)
  • 1 tbsp mirin

Main Ingredients

  • 2 packets ramen or other instant noodles, uncooked (discard seasoning)
  • 1.5 tbsp vegetable oil (or other neutral flavoured oil)
  • 400g / 14 oz mushrooms, sliced (any type)
  • 2 garlic cloves, minced
  • 2 tsp sesame oil (or more oil)
  • 5 green onion stems (shallots/scallions), separated into white/pale green parts and green parts
  • 1 1/4 cups (315 ml) water, plus more as needed

Instructions

  1. Prepare the sauce: In a small bowl, mix together the dark soy sauce, oyster sauce, hoisin sauce, and mirin until well combined to create the flavorful sauce base.
  2. Prep green onions: Cut the green onions into 5cm (2″) lengths, separating the white and pale green parts from the green parts to be added at different stages of cooking.
  3. Cook mushrooms: Heat the vegetable oil in a large skillet over high heat. Add the sliced mushrooms and cook for 3 minutes until they begin to soften.
  4. Add garlic and sesame oil: Add the minced garlic and sesame oil to the skillet, cooking until the mushrooms and garlic turn golden and fragrant.
  5. Add sauce and white parts of green onions: Pour in the prepared sauce and stir quickly. Then add the white and pale green parts of the green onions, cooking another minute until the mushrooms start to caramelize.
  6. Create a well in the skillet: Push the mushrooms to the side of the skillet to create a large well in the center for cooking the noodles.
  7. Add water and noodles: Pour in 1 1/4 cups water and add the uncooked ramen noodle cakes, pressing them down gently into the water.
  8. Cook noodles: Let the noodles cook for 45 seconds, then flip them carefully. Cook an additional 30 seconds, then break up the noodles with a spatula or chopsticks to allow even cooking and mixing.
  9. Toss with green onions and adjust sauce consistency: Add the green parts of the green onions and toss everything together well. Add more water as needed to achieve a nice saucy consistency.
  10. Serve immediately: Transfer to serving plates and enjoy your hot, savory Asian Mushroom Ramen Noodles right away!

  • Note 1: Use any type of instant noodles such as ramen or other quick-cooking varieties but discard the seasoning packet.
