Ingredients

  • 2 packets ramen or other instant noodles, uncooked (discard seasoning)
  • 1.5 tbsp vegetable oil or other neutral flavored oil
  • 400g / 14 oz mushrooms, sliced (any type)
  • 2 garlic cloves, minced
  • 2 tsp sesame oil or more oil
  • 5 green onion stems (shallots/scallions)
  • 1 1/4 cups (315 ml) water, plus more as needed
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce or hoisin sauce
  • 2 tsp hoisin sauce or more oyster sauce
  • 1 tbsp mirin

Instructions

  1. Step 1: Mix the dark soy sauce, oyster sauce, hoisin sauce, and mirin together in a small bowl to make the sauce.
  2. Step 2: Cut the green onions into 5cm (2″) lengths and separate the white/pale green parts from the darker green parts.
  3. Step 3: Heat the vegetable oil in a large skillet over high heat. Add the sliced mushrooms and cook for 3 minutes without stirring too much to allow browning.
  4. Step 4: Add the minced garlic and sesame oil, cooking until the mushrooms and garlic turn golden.
  5. Step 5: Pour in the prepared sauce, stir quickly, then add the white parts of the green onions. Cook for 1 minute until the mushrooms are caramelized.
  6. Step 6: Push the mushrooms to the side of the skillet to create a large well in the center.
  7. Step 7: Add the water into the well, then gently squish the uncooked noodle cakes in.
  8. Step 8: Cook the noodles for 45 seconds, then flip them over and cook for another 30 seconds. Break the noodles apart with a spatula.
  9. Step 9: Add the green parts of the green onions and toss everything together well. Add more water if needed to keep the sauce saucy.
  10. Step 10: Serve the ramen immediately while hot and enjoy!

Tips & Variations

  • Use a mix of mushroom varieties like shiitake, cremini, and oyster for deeper flavor.
  • Adjust the amount of sesame oil to your preference for a stronger nutty taste.
  • For a vegetarian version, substitute oyster sauce with extra hoisin sauce or a vegetarian mushroom sauce.
  • Adding a soft-boiled egg or some chili flakes can elevate the dish even more.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet with a splash of water to loosen the sauce, or microwave until heated through. The noodles are best enjoyed fresh for optimal texture.
