Ingredients

  • 100g pearl couscous
  • 1 tbsp olive oil
  • 400g courgettes, roughly chopped
  • ½ red onion, sliced
  • 1 red chilli, deseeded if you prefer less heat, finely chopped
  • 2 garlic cloves, finely sliced
  • 10g mint, leaves picked and finely chopped, plus a few whole to serve
  • ½ lemon, juiced
  • 1 tbsp honey
  • 50g light Greek-style salad cheese

Instructions

  1. Step 1: Cook the pearl couscous according to the pack instructions. Once cooked, drain and set aside.
  2. Step 2: Heat the olive oil in a frying pan over medium-high heat. Add the courgettes and sliced red onion. Fry, stirring occasionally, until they are browned and softened, about 8 to 10 minutes.
  3. Step 3: Stir in the chopped chilli and garlic, cooking for another 2 to 3 minutes until fragrant.
  4. Step 4: Remove the pan from the heat. Stir through the chopped mint, lemon juice, honey, and season with salt and pepper to taste.
  5. Step 5: Divide the cooked couscous between plates. Top with the courgette mixture, crumble over the Greek-style salad cheese, and scatter with whole mint leaves to serve.

  • 10g mint leaves, picked and finely chopped, plus a few whole leaves to serve
  • ½ lemon, juiced

Other Ingredients

  • 1 tbsp olive oil
  • 1 tbsp honey
  • 50g light Greek-style salad cheese

Instructions

  1. Cook the couscous. Follow the package instructions to cook 100g of pearl couscous. Once cooked, drain any excess water and set the couscous aside.
  2. Sauté the vegetables. Heat 1 tablespoon of olive oil in a frying pan over medium-high heat. Add the roughly chopped courgettes and sliced red onion. Cook, stirring occasionally, for about 8-10 minutes until the vegetables are browned and softened.
  3. Add chilli and garlic. Stir in the finely chopped red chilli and sliced garlic cloves, then cook for an additional 2-3 minutes until the mixture is fragrant.
  4. Finish the vegetable mixture. Remove the pan from the heat. Stir through the finely chopped mint leaves, juice of half a lemon, 1 tablespoon honey, and season to taste with salt and pepper.
  5. Plate and serve. Divide the cooked couscous evenly between plates. Top with the courgette and chilli mixture. Crumble 50g of light Greek-style salad cheese over the top and scatter with whole mint leaves for garnish.
